What’s Left In The Fridge?

My wife D.O.D. has an uncanny ability to create amazing dishes from whatever happens to be left in the fridge. Take last night’s dinner as an example…

Stuffed Pepper

The dish above was created with a few simple ingredients (basically all we had left in the house) – a red pepper, white corn cut off the cob, diced tomatoes, parsley, salt, pepper, and olive oil. It was baked at 425º for 15 to 20 minutes.

Simple but healthy and amazingly tasty!
