Quick Monday Dinner

D.O.D created this dish at the end of a long Monday. It took her less than 20 minutes start to finish – good fresh food, fast & healthy!

Mahi and Aspargus

More often than not, D.O.D. doesn’t follow a ‘recipe’, but here are her instructions to create this amazing meal:

  • Mahi frozen filets and asparagus both steamed until cooked (approx. 15 minutes for the fish, 5 minutes for the asparagus)
  • Couscous cooked on the stove top at same time (follow directions on the package). Mix in a few pine nuts toward the end.
  • Plate everything – top the fish with some seasoning (a family secret recipe!) and a little shredded cheese.
  • Microwave for 30 seconds or so to melt the cheese. Serve with a chilled Chardonnay.
